My insomnia kicked in again last night. I woke up at 2:00 a.m. on Friday. I finally fell asleep at 5:30 a.m. and then woke up at 8:30 a.m. It was sunny, but cool.
Sidebar: When I looked at Facebook, Betsy Knapp, who lives in Marine City (not that far north or me) said it was thundering and lightning and raining. WTF?
So, after a cup of coffee, I cut into the cantaloupe. I cut half of it into bite size pieces and covered the other half with cling wrap.
I ate some of it for breakfast and saved the rest for lunch.
I got cleaned up, but decided not to go anywhere. so, I read and putzed around all day. I mailed yet another check for a doctor bill. It finally started to cloud up around 3:00 p.m.
I started dinner about 5:30 p.m. I broiled some brats in the oven while I boiled some potatoes on the stove. I was making a Nigella Lawson recipe for Salt and Vinegar Potatoes.
Sidebar: The recipe called for whole baby white potatoes, which I didn't have. I had small Yukon Gold potatoes that I cut in half. That was my downfall!
After they are boiled, you put them on a oiled sheet pan and squish them a little with a fork. Her's, because they were whole and round, squished into little patties. Mine just fell apart!
But, I endeavored to persevere. From there, I roasted then in a 425 degree oven for 20 minutes. Then I flipped then over and roasted them for 10 minutes more.
I put them on a serving platter and sprinkled them with apple cider vinegar and Kosher salt.
I plated my dinner and added some Dijon mustard for the brats.
The potatoes tasted good although they were a hot mess.
I left the kitchen mess to clean up in the morning and went back to half-watching DIY shows and reading until bedtime.
Betsy's in Champagne il I believe. Would you do the potatoes again? They do sound good.
ReplyDeleteThey tasted great. I would make them again, but I would use the round white baby potatoes instead.
