It was warm again on Monday morning. I'm guessing this is our shortened version of the January thaw. I'll take it!
I went to Ten Yen and got the chicken sub gum, won ton soup and hot tea. I couldn't eat it all, but it was delicious.
It was still sunny and warm, so I walked outside in the afternoon. First time in a long time.
Back home after work, I watched the news until 7:00 p.m. Then I took off the shells and tails of the shrimp. I made it into shrimp scampi over linguine.
Sidebar: I make this so much I could do it in my sleep. But, I thought I'd kick it up a notch. So, I searched through recipes to see if there was something I'd missed.
I found an Ina Garten recipe that used a LOT more lemon juice and even lemon zest than I do. But, no shallots! WTF?
So, I went with the extra lemon, but used the shallots anyway. No shallots just seemed wrong...
Sidebar: This gave me a chance to use both my lemon squeezer and my new grater. They both worked perfectly!!! Thanks, guys!
I assembled my food, topped it with grated Parmesan and ate a fantastic dinner!
I debated on various shows, ended up taping one but went to bed at 9:00 p.m. instead.
