| CaptainK's Radish Salad |
Clean and cut each radish into 8 wedges. Peel the cucumber then halve lengthwise and then slice crosswise 1/4 inch thick. Add the radishes and cucumber to the sliced red onion.
Bring the vinegar, sugar, salt and pepper to a boil in a small saucepan, stirring until the sugar has dissolved, then stir in oil.
Pour the hot dressing over the vegetables and stir. Leave standing 10 minutes. Stir and salt to taste before serving.
Note: this can be made up to four hours ahead and chilled, covered. But, remember to bring it to room temperature before serving.
