Carla... You got some 'splaining to do!

Per Cooks magazine:

"Dressing the potatoes: For a creamy potato salad let the potatoes cool for at least 30 minutes before adding the dressing. Hot potatoes with a cream dressing may cause the dressing to separate and become an oily, not-so-tasty-mess. For a vinaigrette-based dressing, add the dressing while the potatoes are still warm. The warmth allows the vinaigrette to penetrate the potatoes for the best flavor"

  2. In my defense, I'm awesome so always listen to me. Secondly, I add the vinegar to the potatoes while they are hot so it absorbs the flavors. Then I let them cool slightly and add the creamy dressing. I don't think the flavor is absorbed after everything is cooled down. Lastly, have I ever steered you wrong? So sorry bout it cooks country...you don't know jack! BTW, who the hell is Jack anyway. XO
